Thin Waffle Cookies


6Eggs
1c.Sugar
3/4c.Vegetable Oil
3c.All-Purpose Flour
1Tbsp.Baking Powder
3Tbsp.Fennel Seeds
1/4c.Unsweetened Cocoa Powder — (optional)
1Additional Egg — (optional)
1/4c.Amaretto — (optional)
1/4c.Additional Flour — (optional)

1.In a large bowl, combine the eggs, sugar, and oil and combine thoroughly.
2.Add the flour, baking powder, fennel seeds, and the optional ingredients if desired, and mix well to form a homogeneous batter.
3.Set aside at room temperature for 30 minutes.
4.Heat the pizzelle iron until very hot.
5.Pour 2 tablespoons of batter onto the iron, close it, and return to heat.
6.Cook until golden brown, about 2 minutes.
7.Repeat until all the batter is used.
