Light and Fluffy Eggnog


1/3c.sugar
1/4tsp.salt
2egg whites
1tsp.vanilla
1/2c.whipping cream — can omit
2egg yolks
4c.milk
3Tbsp.sugar
ground nutmeg or cinnamon

1.Beat 1/3 c. sugar into egg yolks.
2.Add salt.
3.Stir in Milk.
4.Cook over medium heat, stirring constantly, until mixture coats spoon.
5.Cool.
6.Beat egg whites until foamy.
7.Gradually add 3 Tbsp. sugar, beating to soft peaks.
8.Add to custard and mix thoroughly.
9.Add vanilla and flavoring.
10.Chill 3 or 4 hours.
11.You can dot with islands of whipped cream and dash of nutmeg/cinnamon.

Yields 6 to 8 servings
