Black Bean Burgers


19oz.canned black beans — drained and rinsed
1c.cooked brown rice
1small onion — chopped
2green onions — finely chopped
1/2tsp.Tabasco sauce — (optional)
1egg
1/4c.bread crumbs
6Tbsp.salsa — (divided)
4hamburger buns
1/4c.low fat plain yogurt
4romaine lettuce leaves
1avocado — sliced (optional)

1.In large bowl, coarsely mash beans with a potato masher or fork.
2.Add rice, onions, Tabasco sauce if desired, egg, bread crumbs and two Tbsp of salsa.
3.Mix well.
4.Divide mixture into 4 and form into patties that are about 1 inch thick.
5.Preheat oven to 350 degrees F.
6.Meanwhile, cook over medium heat on a non-stick pan for 4-5 minutes each side or until lightly browned.
7.Transfer to a pan and cook in preheated oven for 10 minutes.
8.In a small bowl, combine remaining salsa and yogurt.
9.Serve with lettuce and avocado (if desired) as a condiment to your burger.

Variation: "Also, I made it into 8 instead of four, and they were plenty big. Because of how dry they were, I might add some worcestershire or maybe some steak sauce next time I make them. Ann used onion powder instead of the chopped onions. Also, I thought I might try using two eggs instead of one."
